Cooking method
- Kystyby is a traditional Tatar dish — think of it as a folded flatbread with a mashed potato filling. Whatever you call it, it's seriously good! Mix the dough from the ingredients above. I can't give you an exact amount of flour, sorry; I can only say it should come out about the consistency of dumpling (pelmeni) dough. Roll it out into rounds sized to your skillet — they should be quite thin, about 2 mm. Fry the rounds on a — pay attention here! — DRY skillet over high heat, watching closely so they don't scorch. From experience, a cast-iron pan works best for this. Stack the finished flatbreads on a plate and cover with a towel so they soften a little. If you can, boil the potatoes for the filling while you fry. Mash the potatoes, and stir in sautéed onion and herbs if you like — don't forget to salt them. Once everything's ready, assemble: spoon mashed potato onto one half of a flatbread, fold the other half over, and press to seal. Fry the folded flatbread on both sides, brush with melted butter, and it's done!
