Skillet Zucchini Pizza with Tomatoes and Chicken
A breakfast plenty of people are bound to love! This is a real pizza with marinated chicken, but instead of a flour crust the base is made from zucchini.

Step 1:
Gather the ingredients and spices for this delicious zucchini pizza, and marinate the chicken breast in herbes de Provence. Grate the young zucchini into a large bowl on the coarse side of a box grater.

To the grated zucchini add three tablespoons of flour, half a teaspoon of baking powder, and one teaspoon of basil. Crack in two eggs and mix thoroughly until smooth.

Finely chop a little dill, add it to the zucchini, stir, and let the batter rest for a few minutes.

Heat a skillet with vegetable oil and add the chicken breast to fry.

Lower the heat, cover the skillet, and let the chicken breast cook through for about ten minutes.

Grate one hundred and twenty grams of hard cheese on a fine grater.

Slice the tomato and bell pepper into rings.

Cut the fried chicken breast into pieces — roughly chopped, not too small.

Pour two tablespoons of vegetable oil into the skillet and brush it evenly across the surface, then spread in the zucchini batter.

Spread the batter evenly with a fork to form the pizza base, sprinkle on a little grated cheese, and season with the pepper blend and salt to taste.

Arrange the chicken pieces, tomato rings, and bell pepper rings in even layers.

Top generously with grated cheese and bake in an oven preheated to 350°F (180°C) for twenty-five minutes. After twenty-five minutes, sprinkle the pizza with the remaining cheese and bake for five minutes more.
