Vanilla Rice Flour Pancakes with Kefir

  • The first thing you'll need for these pancakes is good-quality rice flour. Sift it through a fine sieve — this removes any stray bits and aerates the flour at the same time. Don't skip this step: it's what gives the batter its especially tender, airy texture. Mix the sifted rice flour with the baking soda and a small pinch of salt. Then add sugar to taste: more if your family has a sweet tooth, or just a little if you plan to serve the pancakes with honey, homemade jam, or maple syrup. For a lovely aroma, add the vanilla sugar (you can substitute vanilla extract). Stir all the dry ingredients together until well combined. Take the kefir out of the fridge ahead of time, or warm it slightly to room temperature or a touch warmer — cultured dairy reacts well with baking soda, especially when it's warm. Pour the kefir into the dry ingredients and stir with a hand whisk or an ordinary tablespoon. There's no need to beat the batter hard — just stir until there are no lumps and it's smooth. Next, get out a large nonstick skillet, which lets you fry the pancakes with only a little oil. Set it on the stove, add a little oil, and heat it up. Spoon the batter into the skillet with a tablespoon and fry over medium heat until golden brown on both sides. Set the fried pancakes on a folded paper towel to soak up any excess oil. Serve these kefir-and-rice-flour pancakes hot with sour cream, homemade jam, runny honey, or chocolate syrup. Enjoy!
