Fluffy Egg-Free Whey Fritters

Perfect for fasting days and vegetarians! These fritters are more like doughnuts and kids love them. Dust them with powdered sugar, or cut them open and drizzle honey or your favorite jam inside.

Cooking method

Cooking time: 40 min
  1. Step 1:

    Step 1

Warm the whey, but don't let it boil. Stir in the sugar, salt, and flour, and whisk until smooth.

  2. Step 2:

    Step 2

    A smooth, thick batter.

  3. Step 3:

    Step 3

The batter should be thick enough to drop slowly off a spoon (if it runs, you'll get thin pancakes instead of fritters). Now stir in the baking soda, mix well, and fry.

  4. Step 4:

    Step 4

Fry over medium heat in a skillet greased with sunflower oil.

  5. Step 5:

    Step 5

Fry on both sides until golden. The fritters puff up nicely, like doughnuts, and don't deflate as they cool. I recommend transferring them to a paper towel to blot excess oil.
