Marinade-Free Pork Neck Kebabs Over Coals

Kebabs with no marinade at all — and they're incredible! Just clean meat; the onion is what brings all the juiciness and tenderness. Serve with a dry red wine — a cabernet sauvignon, for instance. Or, if that's your thing, ketchup.

  • Cut the pork neck into small chunks. Peel the onion, chop it finely, and salt it with enough salt to season the meat. Work the onion and salt together well until it releases its juice. Add the seasonings to the meat — about 5 g (1 tsp) of each, except the cumin. Mix well and let it sit for 5 minutes. Add the prepared onion and mix again. After an hour the meat is ready. Important: stir the cumin (5–10 g) into the meat right before you thread it onto the skewers. Five minutes before it's done, brush the kebabs with sunflower oil. Enjoy!
