- Step 1: Set all the ingredients out on the counter a few minutes ahead so they can warm to room temperature. Pour the sugar and table salt into the warmed whole milk. Crack in the egg and stir it into the mixture. Step 2: Add the melted butter, then the baking powder and sifted flour. Stir. The batter should have the consistency of medium-fat sour cream. TIP: Don't skip sifting the flour — it aerates the batter and breaks up any clumps. Step 3: Cook the pancakes on a hot dry skillet, with no oil. As soon as bubbles appear on the surface, flip them. TIP: Pour the batter in portions that make rounds about 4–6 inches (10–15 cm) across. Step 4: Stack the golden pancakes. Serve them to friends drizzled with maple syrup and topped with your favorite fruit. Round it out with coffee and cream, a warm mug of cocoa, or a glass of milk.
