Cooking method

Cooking time: 25 min
  1. Step 1:

    Step 1

    Gather your ingredients.

  2. Step 2:

    Step 2

    Whisk the egg.

  3. Step 3:

    Step 3

Pour the milk into the bowl with the egg—warm milk works best so the flour doesn't clump.

  4. Step 4:

    Step 4

Add the sifted flour and stir until smooth, with no lumps. Stir in the baking soda slaked with the vinegar. Mix well—the batter should puff up a little.

  5. Step 5:

    Step 5

Mash the cottage cheese with the salt. Grate the hard cheese on the coarse side of a box grater.

  6. Step 6:

    Step 6

Add the cottage cheese and hard cheese to the batter and stir thoroughly.

  7. Step 7:

    Step 7

You'll end up with a batter about the consistency of thick sour cream.

  8. Step 8:

    Step 8

In a skillet (cast iron or another heavy-bottomed pan works best), melt a pat of the butter—reserve a small piece for brushing the finished flatbread.

  9. Step 9:

    Step 9

Once the butter has melted, pour in the batter. Cook covered over low heat for about 10 minutes. When the bottom is golden and bubbles break through the top, carefully flip the flatbread and cook until done.

  10. Step 10:

    Step 10

Slide the flatbread out of the pan, brush it with butter, and garnish with sprigs of parsley.

  11. Step 11:

    Step 11

Serve it alongside soup or enjoy it on its own. Khachapuri is especially good with a cup of freshly brewed coffee for breakfast. Enjoy!
