Step 1:
If necessary, carefully separate the meat from the bones, remove the skin. Season the thighs with salt and pepper.
Step 2:
Fry the chopped onion and garlic for no more than a minute.
Step 3:
Add chopped tomatoes / you can take fresh or canned in their own juice, but in any case remove the skin /. Make medium heating and evaporate almost all the liquid without a lid. After 10 minutes, add all the seasonings: salt, pepper, a couple of pinches of sugar, basil, oregano. Mix, taste and, if necessary, adjust the taste. Remove from the stove.
Step 4:
Breading the thighs: first on both sides in flour, then in a beaten egg, and at the end - a mixture of breadcrumbs and cheese.
Step 5:
Fry them on a small heat for about 3-4 minutes on each side, without closing the lid / so that the crust does not soften, but remains crispy /.
Step 6:
Next a few options : B-1 put the tomato mixture right in the pan on the thighs, sprinkle with grated cheese, cover with a lid for a couple of minutes, until the cheese melts and the dish is ready to serve. B-2 put the thighs on a baking sheet / if there are a lot of them / and in the oven - until the cheese melts. B-3 transfer to a beautiful fireproof mold / in it we will serve /, and then under the grill.
Step 7:
In any variant - cheese on top of vegetables and melt it. Bon appetit!
Serve with mashed potatoes, rice or other favorite side dish.
You can prepare it in advance before the holiday, but without cheese. Sprinkle with cheese and warm up before serving.
