Glass Noodles with Beef, Vegetables, Soy Sauce, and Ginger

Make a restaurant-worthy dish right at home! Glass noodles (funchosa) with beef and vegetables are a wonderful mix of flavors, and they come together with very little time or effort. Keep in mind that glass noodles are fairly filling, so a small amount goes a long way per serving.

    1. Rinse the beef and cut it into thin strips. Sauté in a little vegetable oil until the meat is tender.
    1. Peel and rinse the onion and carrots, then cut them into matchsticks; slice the green onion the same way. Add all the vegetables to the meat, sauté for a couple of minutes, and stir in the ground ginger.
    1. Cook the glass noodles according to the package directions, then add them to the meat and vegetables. Pour in the soy sauce and toss to combine.
    1. Keep everything over the heat for just 1–2 minutes so it all warms through together.
  • Serve sprinkled with sesame seeds and garnished with fresh cilantro, if you like.
