Lavash with Adyghe Cheese
A tasty, simple dish you can make outdoors or on the stovetop at home. It's an all-purpose recipe for a delicious, light, quick snack (and, by the way, a nutritious and wholesome one too) that you can cook over a grill in the fresh air — or on the stove at home. You could even bake it in the oven, but we like it best when the lavash turns a little crispy. Give it a try! (Adyghe cheese is a fresh, mild Circassian cheese, much like a soft farmer's cheese or a firm ricotta.)

- Grate the hard cheese on the coarse side of a box grater. 2. Grate the Adyghe cheese too, and mix it with the hard cheese. 3. Finely chop the herbs and add them to the cheese mixture. 4. Grate the butter on the coarse grater and stir it in with everything else. 5. Crack in the egg and add salt. Mix thoroughly. 6. Divide the lavash into pieces, spread on the filling, and roll or fold it up. If you're grilling outdoors, make large portions and cut them afterward; if you're cooking in a skillet at home, smaller portions work better. 7. Fry for a few minutes on each side. Enjoy!
