Pork Roll with Cranberries
The prettiest, tastiest meat dish for a holiday table!
Cooking method

Step 1:
Rinse the pork and pat it dry. Come in about ¾ inch (2 cm) from the edge and make a vertical cut, but don't cut all the way through.

Turn the knife so it's parallel to the board and keep cutting, unrolling the meat like a scroll.

Pound it lightly to even it out.

Season with salt and pepper.

Scatter fresh cranberries over the meat.

Sprinkle with sugar.

Roll the meat up.

Step 10:
Tie it with kitchen twine and season with salt.

Step 11:
Pour vegetable oil into a baking dish. Set the meat in and tuck rosemary sprigs around it.

Cover with foil and roast the meat for about an hour.

Step 13:
Then remove the foil and roast until golden brown, basting now and then with the juices that collect in the dish.

Step 14:
Snip off the twine.

Step 15:
Slice the finished roll. Serve hot or cold. Enjoy!
- You can use dried cranberries for this recipe — just soak them in a little liquor for 30 minutes first.
