Zucchini and Cottage Cheese Pancakes with Oats
This dish is easy to make and remarkably tasty. Everyone's had zucchini fritters, but I was pleasantly surprised by how fast these tender, airy, delicious zucchini-and-cottage-cheese pancakes vanished off the table. Now I always double the batch.
Cooking method

Step 1:
As I mentioned, I double the amounts here — the original recipe calls for half as much. Wash and peel the zucchini and grate it on the coarse side of a box grater. Put it in a sieve, sprinkle with a little salt, and let it sit for a few minutes.

Crack the eggs into a bowl and add the cottage cheese and rolled oats. Use regular oats — not instant, but not too coarse either. If the flakes are large, pulse them briefly in a blender to break them down a bit.

Mash and mix everything together thoroughly. You could use an immersion blender, but doing it by hand works better.

Squeeze the liquid out of the zucchini and add it to the batter, along with the flour, pepper, and salt (keep in mind the zucchini was already salted). Add a little sugar if you like. Mix until the batter is smooth.

Heat a skillet well with vegetable oil. Almost at high heat, spoon in the batter and fry on one side until browned, then lower the heat, flip, and cook covered until done. Cook each batch the same way. :)
