Chocolate-Coffee Pancakes

  • Pour the milk into a deep bowl (I use store-bought 2.5% milk), add the three yolks, and whisk well. Then stir in a heaping teaspoon of cocoa and the same amount of instant coffee (I used instant Nescafé from a jar), plus salt, sugar, and a little vanillin for aroma. My milk started out cold, so to avoid nasty lumps I stirred in a little (about a full tablespoon) of boiling water straight from the just-boiled kettle. Now gradually add the sifted flour, stirring constantly, until the lumps disappear — the batter should be like a regular pancake batter, not runny (the thickness depends on how much flour you work in). That's it, the batter is ready. Set a medium skillet over high heat and let it warm up, then grease it with oil, turn the heat down to low, and spoon on the batter (I fit three big pancakes at a time). Fry on both sides. Serve them with tea, coffee, cocoa, milk, or a milkshake. Best of all, these pancakes are great on their own — no sour cream, condensed milk, jam, or honey needed. They can be the star of any table. Quick, easy, pretty, and very, very tasty!
