Zucchini Fried Eggs

A simple, quick dish made from wholesome vegetables! There are all kinds of zucchini recipes out there — but have you ever tried fried eggs with zucchini? You can keep it minimal with just zucchini, eggs, seasoning, and a little oil for frying. Or you can dress it up with other vegetables or some meat, whatever you like. From here it's all up to your imagination and whatever you have on hand.

    Rinse the vegetables under running water. Peel the zucchini and remove the seeds; trim the stem end off the tomato. Chop the green onion.

    Grate the zucchini on the coarse side of a box grater.

    Salt and pepper the zucchini, and add any spices you like. Squeeze out the excess liquid.

    Cut the tomato and ham (or sausage or bacon) into cubes.

    Heat a skillet, add the vegetable oil, lightly fry the ham, then add the tomato and cook for about 2 minutes.

    Then add the zucchini, stir, and fry until the zucchini is cooked through. If you're making it without tomato and ham, just fry the zucchini on its own.

    Once the zucchini is cooked, level off the top.

    Crack in 3 eggs and use a fork to spread the whites across the surface. If you'd rather keep the yolks whole, leave them be — I broke mine up with a fork.

    Scatter green onion over the top (skip it if it's not your thing). Cover with a lid and wait for the eggs to set. That's it! Cut into portions and lift them onto plates with a spatula. Enjoy!
