- First, make the sauce: in a small bowl or mortar, grind the garlic with the chili and salt; add the oyster sauce (or fish sauce) and lemon juice to the resulting paste, mix well, and stir in the chopped herbs. Now you can cook the snails: drop the lemongrass and kaffir lime leaves into boiling water and let it boil for 2–3 minutes; add the snails and boil everything together, covered, for 5 minutes; lift the snails out with a slotted spoon. Serve the boiled snails with the sauce you made. Enjoy your meal!
