Cooking method
First prepare the sauce:
- in a small cauldron or mortar, you need to grind garlic with pepper and salt;
- add oyster sauce (or fish sauce) and lemon juice to the resulting gruel, mix well and add chopped greens.
Now you can cook snails:
- put lemongrass and Kaffir lime leaves in boiling water, let it boil for 2-3 minutes;
- we send snails to the same place, boil everything together under the lid for 5 minutes;
- we extract the snails with a slotted spoon.
We serve boiled snails with cooked sauce on the table.
