  • Toss the well-washed mushrooms with the sour cream, salt, and pepper. You can use mayonnaise instead of sour cream, and plenty of people like to use olive oil for this. Let them marinate for 30–40 minutes. Cook the mushrooms on skewers if they're large, or on a grill grate if they're small. Keep a close eye on them so they don't dry out or burn. Don't crank the heat too high — it's better to let the mushrooms take their time over the coals.
