The most tender cottage cheese fritters — no one can resist them! This recipe is a great option for fritter lovers. Just a little flour and low-fat cottage cheese mean far fewer calories than usual, yet the fritters come out wonderfully tasty. They're especially good served with apples or fruit jam — a great start to the morning.

  • Start by pressing the cottage cheese through a coarse sieve or mashing it; I personally run it through an electric grinder. Once the cottage cheese is free of big lumps, mash the egg yolk with half a tablespoon of sugar and stir it into the cheese. Blend this mixture well with a mixer and mix in the salt. Now set the cottage cheese aside for a moment and beat the egg white. Fold the whipped white into the cheese mixture and stir again, gradually adding 2 tablespoons of flour and the sour cream. Once the batter is smooth, start frying. Spoon it onto the pan a tablespoon at a time. The fritters can stick a little, so I lightly dust them with flour before setting them on the hot skillet. If you like your cottage cheese fritters sweeter but have no jam on hand, dust them with powdered sugar before serving. Delicious!
