  • Thick yeast pancakes made with kefir are absolutely wonderful with apricot jam, and they're quite easy to put together. I sift the flour, crumble the yeast into the same bowl and stir, then add the butter, salt, sugar, and room-temperature eggs (not straight from the fridge). Pour in room-temperature kefir and mix it all with a wooden spoon; you should get a slightly thick batter. If it seems too stiff, add a little more kefir, then set it in a warm spot for about an hour to double in volume. Ladle about ten small pancakes' worth of batter into a wide skillet and cook them all at once, browning both sides. Serve dusted with powdered sugar and drizzled with the syrup from apricot jam. Absolutely delicious! I've made these yeast pancakes dozens of times now, and it's hard to believe I only learned the recipe early this year — I tried them at a friend's house, loved them so much I asked for the recipe on the spot and jotted it down on a napkin right at the table so I wouldn't forget. I made them the very next day, and everyone was thrilled.
