  • There are countless ways to cook meat, and I want to share one for pork with crab. Plenty of people will tell you meat and seafood don't belong together — I used to think so too, but this recipe made me reconsider. The ingredient list is on the longer side and a few items can be tricky to track down, yet the cooking itself is simple. Finely chop the white part of the green onions. Grind the chiles to a powder. Slice the pork into thin pieces and cut the liver into strips. Cut the bamboo shoots into rounds. Heat the oil in a wok and lightly fry the onion and chile. Add the meat and liver, and after 2 minutes add the bamboo shoots and crab. Season with salt and pepper, add the peeled and chopped tomatoes, and stir-fry everything together for 2 minutes. In a small bowl, whisk the corn flour with 2 tablespoons of water, the fish sauce (nuoc mam), and the shrimp paste. Pour this into the wok, stir, and bring to a boil. To serve, arrange the meat and crab with the sauce on a platter and sprinkle with chopped cilantro or parsley. Offer soy sauce on the side. This dish is just as good for a cozy family supper as it is for a big celebration!
