- I came across this recipe in some cooking magazine. It's not the simplest to make, but you won't be disappointed. It's wonderful for any holiday dinner or lunch: it uses familiar ingredients and yet it's a traditional Irish dish. What sets this pork apart is that it roasts with a splash of cider, which gives it a lovely aroma. For convenience, let's split the cooking into two parts. First, the filling: boil the potatoes in salted water and let them cool. Cut the apples into cubes. Then chop the sage, thyme, and onion. Put the potatoes, apples, onion, and herbs into a deep bowl. Mix everything well, gently mashing the potatoes as you go. Now for part two: rub the pork steaks with salt, pepper, and butter. Arrange them around the edges of a baking dish, pour over the cider, and cover with foil. Be sure to poke 5-6 holes in the foil to let air circulate. Bake in an oven preheated to 400°F (200°C) for about 1 hour. To serve, set a steak on each plate and top it with the filling. Add a little more cider and herbs if you like. That's it — enjoy!
