  • Start by cutting the beef ribs into pieces about 2 inches (5 cm) long. Marinate them in about a cup of chimichurri sauce, and the next day take them out of the fridge and season with pepper to taste. Heat your grill as hot as it will go, lay the ribs on, and baste them with a salt brine (6 tablespoons of salt per 1 quart / 1 liter of water). Grill until browned, baste with the brine again, and sear a little more. Keep cooking for another 15-20 minutes over lower heat, turning the ribs and basting often with the brine. Your Argentinian grilled beef ribs are ready! Serve them with chimichurri, lettuce leaves, and vegetables. A glass of red wine makes a great pairing. Enjoy!
