Fluffy Yeast-Raised Belyashi (Fried Meat Buns)
Belyashi are perfect for a filling, tasty snack!

Step 1:
The dough. Activate the yeast: stir the yeast and 2 tablespoons of sugar into ½ cup of warm milk, then set it in a warm spot for 10–15 minutes. Once a foamy cap forms on the yeast, you're ready to make the dough.

Step 2:
The sponge. Add 1 cup of sifted flour to the yeast, along with the remaining milk and sugar. Knead, working in another cup of flour.

Step 3:
Dust the top of the dough with flour, cover with a towel, and let it rise in a warm place for 1.5 hours.

Step 4:
The filling. Grind the meat together with the onion and garlic. Soak the bread in a little milk and add it to the meat. Knead the filling well, then season with salt and pepper. Pour in the kefir and knead again. The filling should come out smooth, fluffy, and juicy.

Step 5:
Melt the butter and let it cool. Separate the egg whites from the yolks, and whip the whites with a pinch of salt until fluffy. After 1.5 hours, uncover the dough and add the melted butter, the yolks, and more flour. Knead well, then fold in the whipped whites; the dough should become elastic and pull away cleanly from the sides of the bowl. Cover with a towel again and set in a warm place. When the dough has doubled, punch it down and let it rise once more.

Step 6:
Dust the counter with flour, tear off a walnut-sized piece of dough, and press it into a flat round with your hands. Place filling in the center. Shape each belyash by pulling the edges of the dough up around the filling, leaving a small opening on top. Carefully lay the belyashi opening-side down in a skillet of hot vegetable oil. Fry over medium heat, flipping only once.

Pile the finished belyashi onto a plate and cover with a towel.
