  • Kids, especially teenagers, grow fast, and they absolutely need iron, calcium, and vitamins. How do you pack all those nutrients into one recipe? Frittata "pizza" is my answer — a dish I found in Italian cooking. This classic Italian dish is essentially an omelet baked on a sheet pan. It's tasty and good for kids (and everyone else). Here's how to make it. Melt the butter in a pan, then add finely chopped tomatoes, bell pepper, mushrooms, onion, pork, and basil. Sauté everything until soft. Separately, whisk together the cream, eggs, and cheese, then stir in the mushroom-and-veggie mixture. Pour the batter into a greased sheet pan and bake for half an hour at 350°F (180°C). Let the frittata cool to room temperature and cut it into diamonds. My kids are always thrilled with this Italian frittata "pizza"!
