I advise you to pay attention to an interesting Italian recipe that is suitable both for every day and for a festive table. I didn't know about him before, until I visited an Italian family. When I tried a salad of radicchio and cauliflower with anchovies, I realized that this is the best food for those who do not want to suffer from extra calories, besides, this salad is full of vitamins.
It is done like this.
Take 300 g of radicchio, clean and cut into thin strips. Then peel and finely chop the shallots. In principle, an ordinary onion is also suitable. We take and first soak the raisins, and then dry it. This is done so that it acquires softness and becomes more lush. And to top it off, we'll wash and peel the anchovies.
Now mix radicchio salad with cauliflower slices in a spacious bowl. Then we put a small saucepan on the fire, into which we add olive oil and heat it. Put chopped onions, raisins and nuts in the oil and fry on very low heat for about 10 minutes. Then add the anchovies and fry for another 3 minutes. After that, add vinegar and a little water (about 1 tbsp.l.) and simmer this mixture for about another minute.
That's it, our radicchio and cauliflower salad with anchovies is almost ready. It remains only to serve beautifully on the table. I think everyone will appreciate this recipe.
