- If you're tired of fussing with ground meat, here's an original and delicious recipe for you: Sophie's cutlets. Start the eggs boiling — hard-boiled. While they cook, rinse the veal and cut it into pieces; here I use four, but cut as many as you'd like cutlets. Pound each piece well on both sides and rub with salt and pepper to taste. Cut a lemon in half and squeeze a little juice over each piece (save the other half for your tea later). Once the eggs are done, run them under cold water so they cool quickly, and meanwhile slice the ham. Peel the eggs and cut each lengthwise into two halves. On each pounded piece of veal, lay a slice of ham and half an egg, then roll it up. To keep the roll from unwinding, tie it with kitchen string. Set the rolls in a hot skillet with butter and fry for 10 to 15 minutes, then pour in the cream, cover, and simmer over low heat until done, about another 10 minutes. Dinner's ready — and no meat grinder to scrub afterward. Enjoy!
