Step-by-step cooking
Step 1:
How to make chicken hearts in sour cream sauce in a frying pan? Prepare all the necessary ingredients. Take spices according to your taste.
Step 2:
Clean the hearts of excess fat, blood clots and films, rinse thoroughly under cold running water. Cut the hearts lengthwise into 4 pieces.
Step 3:
Peel the onion, rinse and cut into small cubes. Heat a deep frying pan with a thick bottom, carefully, so as not to get burned, pour vegetable oil on it and transfer the chopped onion. Fry over medium heat, stirring occasionally, until soft. It took me about 3 minutes.
Step 4:
Then add the chopped hearts to the onion, stir and simmer over high heat for 10 minutes.
Step 5:
Then add salt, add bay leaf and mix.
Step 6:
Fill the hearts with water so that they are completely covered, cover with a lid and simmer for 20-25 minutes over medium heat.
Step 7:
To prepare the sauce, mix the remaining water (I got a little more than half a glass), sour cream and flour. This time I made the sauce thinner, so I added 1 spoonful of flour. If you want thicker, you can add more.
Step 8:
Peel the garlic and pass it through the press. When the hearts are ready, add the sauce and stir, simmer for 2-3 minutes.
Step 9:
When the sauce becomes thicker, add garlic and spices.
Step 10:
Stir and remove from heat. Before serving, hearts in sour cream sauce can be sprinkled with chopped herbs.
Serve hearts in sour cream sauce for dinner or lunch. This is a delicious, flavorful and nutritious dish. According to this recipe, you can also cook duck hearts.
To avoid irritating the mucous membrane of the eyes when slicing onions, rinse the onion and knife with cold water. The cutting board will not absorb the unpleasant onion smell if you rub it with a piece of lemon before slicing.
Since the degree of salinity, sweetness, bitterness, sharpness, acid, burning is individual for everyone, always add spices, spices and seasonings, focusing on your taste! If you put some of the seasonings for the first time, then keep in mind that there are spices that it is especially important not to shift (for example, chili pepper).
Use oil with a high smoking temperature for frying! Any oils are useful only until a certain temperature is reached - the point of smoking, at which the oil begins to burn and toxic substances, including carcinogens, are formed in it.
Unrefined oils, with rare exceptions, have a low smoking point. There are a lot of unfiltered organic particles in them, which quickly begin to burn.
Refined oils are more resistant to heating, and their smoking point is higher. If you are going to cook food in the oven, on a frying pan or grill, make sure that you use oil with a high smoking point. The most common of the oils with a high smoking point: refined varieties of sunflower, olive and grape.
