Chicken Sauté with Zucchini and Tomatoes
A delicious, hearty dish of vegetables and chicken breast. This sauté is really filling and best suited to summer cooking. You can use whatever fresh herbs you like, but to my taste cilantro fills the dish with a wonderfully appetizing aroma that pairs beautifully with both the chicken and the zucchini.

Step 1:
Gather everything on the ingredient list for the sauté. Rinse the chicken breast under cold water, wash all the vegetables, and peel the onion and carrot. If the zucchini is young and tender, there's no need to peel it.

Cut the chicken breast into medium cubes.

Finely chop the onion.

Cut the carrot into small cubes.

Step 5:
Pour the vegetable oil into a pot and set it over high heat for a few seconds to warm up.

Add the cubed chicken breast to the pot first and fry over high heat, stirring, for 5 minutes.

After 5 minutes, add the chopped onion to the chicken and keep frying them together for another 4 minutes.

While the chicken and onion cook, toss the diced carrot with the spices.

Then add the spiced carrot to the pot, stir, and keep frying over high heat for another 3 minutes.

Meanwhile, cut the zucchini into cubes, the same size as the chicken.

Cut the tomato into small cubes as well.

Add the diced zucchini and tomato to the pot with the chicken and other vegetables right away, salt everything, stir well, and turn the heat down to low. There's no need to add water — the vegetables release plenty of moisture as they stew.

Step 13:
Cover the pot and simmer the sauté over low heat for 30 minutes.

Step 14:
While the vegetables and chicken simmer, finely chop the cilantro.

Step 15:
After half an hour, stir the finely chopped cilantro into the sauté.

Step 16:
Cover the pot again and turn off the heat after a minute. Let it rest for about 5 minutes, then serve.

Step 17:
Serve the chicken and vegetable sauté as a dish in its own right, either hot or chilled.
