Stewed Pork with Potatoes, Carrots, Onions, and Peppers
This aromatic, tasty recipe is sure to win you over! Fluffy, sweet potatoes love to be enriched with a little fat — vegetable or animal. Here's my way of making stewed potatoes with meat.

Cut the pork into large 1¼-inch (3 cm) cubes, then fry them in vegetable oil in a deep skillet, stirring, until the meat is browned.

Add the coarsely chopped carrot to the meat.

Then add the chopped onion.

Now pour in enough water to just cover the meat and simmer over low heat for about an hour. Check the meat as it cooks — it may be done sooner, especially if the pork is fresh. Once the meat is nearly cooked, season the dish with salt, pepper, and spices, and add the chopped potatoes and bell pepper.

Add more water and continue simmering until the potatoes are tender. You can transfer the stew to a cast-iron pot and finish it in the oven for 15–20 minutes, or just finish it in the covered skillet.
