- Some people don't eat meat at all, and others will eat anything that crawls, hops, or flies. Me, I have a real soft spot for lamb stew—especially lamb with cabbage, like in this recipe. So: cut the cabbage into a few chunks, remove the core, and shred it into small pieces. Rinse the lamb, let it sit briefly in cold, lightly salted water, pat it dry, and chop it finely. Dice the onion too. Crumble the bouillon cubes and dissolve them in the water. Heat the oil in a skillet and brown the lamb for about seven to ten minutes. Stirring constantly, sauté the onion, then add the cabbage. Cook for 6–8 minutes. Pour in the dissolved bouillon, sprinkle with caraway, stir everything together, and cover the pan. Simmer for just over an hour over low heat. Dice the raw potatoes, add them to the pan, and stir them in with the meat. Leave covered, stirring now and then, until the potatoes are soft. Season with salt and ground pepper to taste. Then set it aside and let this wonderful dish rest under the lid for a little while.
