Zucchini Sauté
Bright, simple, budget-friendly, and juicy—perfect for an everyday menu! This zucchini sauté can go on the dinner table as a side for meat or as a dish in its own right. Step 1:
How do you make a zucchini sauté? Gather the ingredients. Wash the vegetables, pat off excess moisture with paper towels, and peel them.

I like to actually taste the carrot in the dish, so I cut mine into small dice. Cut yours however you like—rounds, half-rounds, or grated on a coarse grater.

Peel the onion and rinse it under cold water. Cut it into small dice.

If you're using young zucchini, you don't have to peel it. Cut the zucchini into rounds, then halve each round, or cut it into medium dice. For more mature zucchini, cut off the tough skin and, if needed, remove the seeds before cutting.

Use multicolored bell peppers for a more vibrant dish. Wash the pepper, halve it, remove the seeds, and cut it into medium slices.

Blanch the tomatoes in boiling water and slip off the skins. Cut them into small dice—or purée them in a blender or on a coarse grater.

Chop the dill, washed and patted dry with paper towels.

Pour refined vegetable oil into a skillet. I used olive oil, but sunflower works too. Once the oil is hot, add the chopped onion (I also added scallions, but that's optional) and cook until translucent. Stir so it doesn't burn.

Add the diced carrot and cook over low heat until soft and golden, stirring from time to time.

Add the zucchini to the skillet and stir. Cook for about 10 minutes, until the zucchini is tender. Season with salt and pepper to taste at the end.

Add the bell pepper to the vegetables. Stir and keep cooking for about 5 more minutes, until the pepper softens.

Now add the chopped tomatoes and stir. The tomatoes should release their juices so the mixture braises rather than fries. If it's too dry, add a little water (about 1 tablespoon). Simmer the sauté over low heat until the excess liquid cooks off.

Peel the garlic cloves and mince them with a knife or press them. Add the dill and garlic to the skillet with the rest of the vegetables. Stir. Cook everything together for 2 minutes, then take it off the heat.

- You can change up the recipe by adding other vegetables—eggplant or green beans, for instance.
- An easy way to peel tomatoes: wash them and score a shallow X in the top with a sharp knife. Drop them into boiling water for 1–2 minutes. Lift them out, cool briefly, and slip off the skins.
- Keep in mind that how you cut the carrot affects the final result: grated carrot breaks down into the mix during cooking, while carrot cut into strips or cubes holds its shape.
- Every oil is good only up to a certain point—its smoke point, where it starts to burn and form harmful compounds. It's worth knowing the right temperature for frying and which oils are best (and which to skip).
