Bulgur Pilaf with Chicken

Step 1:
How do you make bulgur pilaf with chicken? Gather all the ingredients on the list. You can swap the chicken breast for any other meat — just note that the cooking time will go up a little.

Rinse the chicken breast and pat it dry with paper towels to remove any excess moisture. Cut the meat into small, evenly sized pieces.

Peel the onion, garlic, and carrot. Rinse all the vegetables in clean water.

Cut the carrot into small sticks, dice the onion, and press the garlic through a garlic press or mince it with a knife.

Chop the tomatoes into small, rough pieces. You can peel them first if you like; I usually don't bother.

Heat the vegetable oil in a deep, heavy-bottomed pot with high sides. Add the chicken pieces and start to brown them. A Dutch oven, cast-iron pot, or high-sided skillet all work well for bulgur pilaf.

After 5–10 minutes of browning, add the carrot, onion, and garlic to the chicken. Cook, stirring occasionally, for another 7–10 minutes.

Step 8:
Add the tomatoes to the meat. Season with salt and pepper to taste and cook for another 5 minutes. At this point you can add your favorite spices or a ready-made pilaf seasoning blend.

Step 9:
Pour a little boiling water into the pot (about half a cup is plenty). Cover, reduce the heat to medium, and simmer everything together for 15–20 minutes.

Rinse the bulgur several times until the water runs clear. Spread it in an even layer over the pot. If you like, wash a whole head of garlic and nestle it into the middle (optional).

Add enough boiling water to cover the grain by about an inch (roughly a finger and a half to two fingers deep).

Cook, covered, over low heat until the bulgur is tender. This takes about 20 to 25 minutes.

Your delicious bulgur pilaf with chicken is ready!
- If there's any liquid left in the pot after that time, turn the heat to high, uncover, and cook for 3–5 minutes until the remaining water evaporates. Serve the finished pilaf with fresh vegetables, your favorite sauces, and whatever else you enjoy. Sprinkle the dish with finely chopped fresh herbs if you like. Enjoy!
- You can swap the chicken for turkey or any other meat you prefer. Just keep in mind that the cooking time and the calorie count will change.
- How do you peel tomatoes easily? Wash them and score an X in the top with a sharp knife. Drop them into boiling water for 1–2 minutes, then remove, cool slightly, and slip off the skins.
