Hot Glass Noodles with Chicken (Funchosa)

    1. Prep the ingredients: wash the chicken and cut it into medium pieces; wash and peel the carrots and potatoes and cut them into medium pieces about the same size as the chicken; peel the onion and cut it medium, too; wash the mushrooms and slice them thin; cut the green onion on the diagonal into long pieces; toast the sesame seeds in a dry pan for 30 seconds; and soak the glass noodles in warm water for 20 minutes, then drain. 2. Next, make the sauce: combine all the sauce ingredients in a bowl and stir well until smooth. 3. Pour the amount of water called for into a medium saucepan. Set it over high heat and bring to a boil. Once it's boiling, add the cut-up chicken, blanch it for 1 minute, then drain — this helps rinse away excess fat. 4. Put the blanched chicken in a clean pot (a Dutch oven or cast-iron pot works well) and pour the sauce over it. Set it over medium heat and cook, covered, for 10 minutes. 5. Add the chopped potatoes, carrots, onion, and chili peppers to the chicken. Cook everything together, stirring, for 7 minutes. Then lower the heat, stir again, and simmer for another 8 minutes. 6. Add the glass noodles along with the sliced mushrooms and green onion (save some green onion to garnish the finished dish). Cook for 5 minutes, until the noodles and mushrooms are done, stirring gently so they're fully coated in the sauce. 7. Sprinkle the finished dish with the toasted sesame seeds and the reserved green onion. Serve hot. Enjoy!
