Slow Cooker Cabbage and Potato Stew

Easy to make — just use your slow cooker's program and set the timer. Serve this cabbage-and-potato stew for lunch or dinner, or as a side for main meat dishes. It does take a while, sure, but the slow cooker does all the work for you!

  • This cabbage-and-potato stew is very convenient to make in a slow cooker: load the vegetables the night before, set the timer, and it can be ready by morning! Start by shredding the cabbage and running the "Bake" (sauté) setting for 40 minutes. You can leave the lid off — the point here is just to bring the cabbage to halfway done. It lightly sautés over that half hour; then add the rest of the prepped vegetables — onion and carrot, and diced potatoes — and lightly sauté those too. When the timer beeps at 40 minutes, close the lid, add the remaining ingredients, and set the "Stew" program for 1 hour. That's it! An hour later, your slow cooker cabbage-and-potato stew is ready!
