Zucchini Sauté for Winter

Another must-have preserve for winter! Cheap, easy, and delicious! This zucchini sauté is light and, you could say, diet-friendly. The tomatoes do the preserving here, and there's just a single tablespoon of vinegar.

  • How do you make zucchini sauté for winter?
    1. Cut the zucchini into cubes, the peppers and tomatoes into strips, and chop the garlic however you like. If the zucchini is large, peel it and remove the seeds, then weigh it in that state — you need 1 kg. 2. Put the tomatoes in a pot, add the salt and sugar, set it on the stove, stir, and warm over low heat. Once the tomatoes come to a boil, cook them for 10 minutes, stirring now and then. 3. Add the zucchini, peppers, and vegetable oil to the pot. Stir, bring to a boil, and cook for 30 minutes. After 15 minutes, add the garlic and stir. Two minutes before it's done, add the vinegar, cover, bring to a boil, and take it off the heat. 4. Ladle the sauté into sterilized jars, seal with lids, turn them upside down, wrap them up, and let cool completely. Store in a cool place. Enjoy!
