Cooking method

  1. Step 1:

    Step 1

A quick, fuss-free cauldron dish made with fresh-picked autumn mushrooms — in our case, button mushrooms. For this recipe, choose medium potatoes and small mushrooms. Cut the onion into half-moons.

  2. Step 2:

    Step 2

Heat the oil in the cauldron over high heat and add the potatoes. Deep-fry them until golden, then lift them out of the cauldron. Next add the mushrooms and fry them until golden as well, then add the onion and spices and stir.

  3. Step 3:

    Step 3

Fry the onion and mushrooms together for about 5 minutes over high heat.

  4. Step 4:

    Step 4

Bring the heat down to low. Return the fried potatoes to the cauldron and stir, cover, and simmer for about 5 minutes. Meanwhile, chop the parsley or dill. Scatter it over the finished dish. Enjoy!

  • This recipe is great for people just getting started with cooking in a cast-iron cauldron. With so few ingredients and a fairly quick cook, it won't give you any trouble. Prepping the ingredients takes about twenty minutes (not counting the mushroom picking), and up to thirty-five minutes to cook in the cauldron. The button mushrooms shown in this video recipe are gathered in large numbers in central Ukraine, but nowadays you can buy them in any supermarket at a pretty low price. Mushrooms are prized for their protein and other nutrients. The gathering itself is a joy for anyone who loves foraging, and this dish is just the thing to cap off a successful outing. If you're feeling creative, you can add some meat of your choice to the cauldron after frying the potatoes — it can fit right into the dish. You don't have to set the cauldron on the stove shown in the video, either; an ordinary cauldron over an open fire works just as well. I wish you all good luck picking mushrooms and a hearty appetite afterward!
