Cod Steaks in a Sour Cream Sauce

The fish and the sauce are ready — all that's left is to pick a side! What makes these cod steaks in sour cream so handy is that they do double duty: fish to go with any side dish, and a delicate, creamy sauce to spoon over it. And for all that versatility, it comes together simply and fast.

  • Start by washing the fish thoroughly under running water, then blotting off the excess moisture with paper towels — the fish shouldn't be very wet.
  • Peel the onion, rinse it under cool water, dry it with paper towels, and cut it into slices.
  • Set a skillet over medium heat, add the butter, and let it melt completely. Add the onion to the hot butter and cook until lightly golden and soft, stirring as you go so it doesn't burn and spoil the dish.
  • Next, pour dry white wine into the skillet with the onion, bring it to a boil, then pour in the fish broth. If you don't have broth, plain water works, and chicken broth is also commonly used for dishes like this.
  • Bring the mixture back to a boil. Once it does, stir in the mustard and the sour cream. You can use sour cream of any fat content, by the way — the lower the fat, the lighter and less caloric the finished dish. Turn down the heat and warm the mixture gently, stirring from time to time, until the sauce is very creamy, fairly smooth, and appetizing.
  • Now for the fish. Lay the cod steaks in the skillet, cover tightly, and braise for 8–10 minutes. When the time's up, take off the lid and season the nearly finished dish with salt and ground black pepper (freshly ground makes it especially fragrant and flavorful).
  • The steaks are done — that quick and easy! Arrange them on a nice serving plate and garnish with sprigs of fresh parsley and lemon slices. You can also squeeze a little lemon juice over the fish, according to taste. Serve while it's still hot.
