Morels in Sour Cream

An elegant, deeply delicious dish made from the first mushrooms of spring! I adore morels, and the moment the snow melts we head into the woods to hunt for these tasty mushrooms. They're quick and simple to cook, and I usually find dishes for them on international sites or dream them up myself. One of my favorite ways to prepare morels is braised in sour cream with a splash of dry white wine. The flavor is wonderfully refined!

    1. Peel and chop the shallots. 2. In a deep skillet, melt the butter and sauté the chopped shallots until lightly golden. 3. Season the shallots with salt. 4. Pour in the wine and keep it over low heat until about two-thirds of the liquid has cooked off. 5. Wash the mushrooms thoroughly and pat them dry with paper towels, then cut them into large pieces. If the morels are small, just halve them or even leave them whole (in that case, soak them in salted water for 10–15 minutes first — this helps flush out any hidden insects). 6. Add the mushrooms and lightly sauté them, seasoning with the freshly ground black pepper. 7. Stir in the sour cream and the lemon juice and mix everything well. 8. Simmer it all together over moderate heat for 10–12 minutes. Serve the morels braised in sour cream as a side or as a main dish. They go beautifully with potatoes and pasta, various grains, and vegetables — and they make a lovely side for meat, too. Enjoy!
