Cooking method
- Put the couscous and raisins together in a heatproof dish. Pour in boiling water (400 ml, about 1 2/3 cups) and let it sit for 8-10 minutes. Meanwhile, chop all the vegetables: the zucchini and onion into thin rounds, the garlic and pepper into small dice. Heat the olive oil in a skillet and saute the vegetables, stirring, for 5-7 minutes, until softened. Sprinkle in the cinnamon and stir. Fold the sauteed vegetables into the couscous, fluffing as you mix so the couscous stays light.
