- To my mind, one of the most important dishes on a holiday table is the appetizer. It sets the tone for the rest of the celebration and gives your guests their first impression of the cook's skill. One of my go-to recipes for this kind of starter is this zucchini appetizer, which I'll walk you through now. Start by cutting the peeled onion into thin half-moons. Peel the carrot and grate it on the medium side of a box grater. Peel the zucchini, remove the seeds, and grate it on the coarse side. Sauté the onion in a skillet with vegetable oil until golden, then add the carrot and sauté as well. Add the zucchini, season with salt and pepper to taste, stir well, and simmer uncovered. A little later, stir in the tomato paste and finely chopped garlic and simmer everything for another 5–7 minutes. Take the finished appetizer off the heat, stir in some chopped fresh herbs, and serve.
