Spezzatino (Italian goulash) with green peas

Cooking is very simple, and eating is very tasty! Spezzatino is a stew cut into cubes. There are many ways to prepare this dish - the traditional one is cooked with potatoes; someone prefers meat in tomato sauce, or with mushrooms, or from cold cuts. Some Italian housewives prepare the dish as a sauce for traditional pasta, in this case more broth is added. In my family, speczatino is preferred with green peas.

Cooking method

Cooking time: 1 h
Finely chop the onion and celery, grate the carrots on a coarse grater and fry the vegetables in vegetable oil in a deep saucepan (I use terracotta dishes).
Cut the meat into pieces the size of a walnut, roll in flour and add to the vegetables. As soon as a crust forms on the pieces of meat, turn down the heat and pour in the white wine. When the wine is absorbed, pour in the broth and add salt and pepper to taste. Cook under a lid on low heat for 40 minutes, stirring occasionally. Add the green peas and cook all together for another 20 minutes.
If freshly frozen green peas are used, they must be thawed before being added to the dish.
