Step 1:
How to make a cupcake with candied fruits in the oven? Prepare the products. In order for the cake to rise well during baking and become soft, all the ingredients must be at room temperature. Therefore, remove the eggs and sour cream from the refrigerator in advance. The oil will melt, so its temperature is not critical. If you have large candied fruits, then cut them into small pieces.
Step 2:
Melt the butter in any way you can. I put it in a saucepan and warmed it over the smallest fire to a liquid state. Cool the melted butter.
Step 3:
Break the eggs into a large bowl. Add sugar. With a mixer, beat the eggs with sugar until a fluffy light mass. It will take about 5 minutes.
Step 4:
Without ceasing to beat, pour in the melted butter.
Step 5:
As soon as it intervenes, stop the mixer. then you can use the usual whisk or spatula.
Step 6:
Add sour cream, mix.
Step 7:
Sift flour into the dough, leave a couple of tablespoons for the candied fruit to crumble. Add baking powder and vanilla, if you use it.
Step 8:
Mix the dough until smooth.
Step 9:
Sprinkle the candied fruits with the remaining flour, distribute it evenly, stirring the candied fruits with a spoon. This will help the candied fruits spread evenly over the dough, and not settle to the bottom.
Step 10:
Put the candied fruits into the dough and mix them with a spatula.
Step 11:
Prepare the baking dish. Any heat-resistant form is suitable for this recipe. If you use a silicone mold, then you do not need to smear it with oil. But it is better to lightly lubricate metal, ceramic or glass dishes with vegetable oil so that the baking does not burn. Pour the dough into the mold. Mine is 20*9 cm in size. But the dough turned out much more, I baked two more small cupcakes. I think that this amount of products will be enough for two of my forms.
Step 12:
Bake the cupcake in the oven, preheated to 180 ° C, top-bottom mode, for about 40-50 minutes. When the top layer of baking is slightly browned, check it for readiness: pierce it with a wooden skewer in several places, if the skewer comes out dry, then the mold (or baking sheet) can be taken out of the oven. Cool the finished cupcake and remove it from the mold. You can sprinkle it with powdered sugar.
We really liked the cupcake, candied fruits decorated it and enriched the taste. But instead of them, you can safely use any dried fruits. Feel free to divide the amount of dough in half, just get an average cupcake.
Be sure to wash the eggs before use, as even the seemingly clean shell may contain harmful bacteria. It is best to use food detergents and a brush.
Butter can be melted in the microwave or in a water bath.
How to melt butter in the microwave?
Cut the butter into small pieces and place it in a special container. To prevent the oil from splashing when heated, cover the oil vessel with a paper towel. The oil should be melted either at the lowest power or in defrosting mode. At first, five seconds will be enough. Next, if the butter has not melted yet, set it again for 5 seconds and start the microwave. Repeat the process several times until the desired result.
How to melt butter in a water bath?
You will need two containers of different diameters. Pour water into a large one and put it on the stove. Place the smaller container on top so that it is submerged in water by about half. Put the sliced butter into it. Under the influence of boiling water, the oil will begin to melt. Stir the oil slightly to speed up the process. As soon as the pieces of oil are completely dissolved, remove the container from the stove.
