Creamy Cheese Soup
The tastiest, wholesome, simple, budget-friendly, and appetizing! Creamy cheese soup is great for fans of light, meatless vegetable dishes. You can make it with various vegetables and adjust the thickness by adding more broth. A perfect dish for kids and grown-ups, for lunch or dinner.
Cooking method
-
Step 1:
How do you make creamy cheese soup? Gather your ingredients. You can use any processed cheese, preferably without add-ins — but one with herbs works too. Wash the vegetables thoroughly and pat them dry with paper towels.
-
Step 2:
Peel the potatoes, carrot, and onion. Cut the potatoes and carrot into cubes. Leave the onion whole. Cut the celery stalk into pieces.
-
Step 3:
Put the potatoes, carrot, celery stalk, and the whole onion in a soup pot. Pour in a liter of water. Set the pot over the heat, bring the water to a boil, and cook over medium heat until the vegetables are done, about 30 minutes. At the end of cooking, take out the onion and discard it.
-
Step 4:
Strain the vegetables through a sieve and return them to the pot.
-
Step 5:
Pour the vegetable broth into a saucepan.
-
Step 6:
Purée the vegetables left in the pot with an immersion blender until smooth and uniform. Blend for a good while.
-
Step 7:
Add the processed cheese to the soup and blend everything again.
-
Step 8:
Pour the vegetable broth into the pot until you reach the consistency you want. I added about 1 cup of broth for a medium-thick consistency. Blend everything again. Return the pot to the heat and warm the soup, stirring, for another 2 minutes.
-
Step 9:
Cover the cream soup and let it rest for about 7 minutes. Then ladle it into bowls. Enjoy!
- Instead of soft processed cheese, you can use firm processed cheese. You can also add regular hard cheese to the soup — and the cheese's flavor will define the overall taste of the soup. Creamy cheese soup is a traditional European dish that's riding a wave of popularity again. That's down to its nutritional value, unbeatable taste, silky texture, and, above all, how easy it is to make. You can serve it at a family meal or even a holiday table: its tempting aroma and rich cheesy flavor will win everyone over. Creamy cheese soup might just become your signature dish. For a more filling version, you can add boiled chicken to the soup and blend everything until smooth.
- You can reduce or increase the amount of water given in the recipe as you wish, depending on whether you want a thicker or thinner soup.
