    Put the potatoes, carrot, celery stalk, and the whole onion in a soup pot. Pour in a liter of water. Set the pot over the heat, bring the water to a boil, and cook over medium heat until the vegetables are done, about 30 minutes. At the end of cooking, take out the onion and discard it.

    Strain the vegetables through a sieve and return them to the pot.

    Purée the vegetables left in the pot with an immersion blender until smooth and uniform. Blend for a good while.

    Pour the vegetable broth into the pot until you reach the consistency you want. I added about 1 cup of broth for a medium-thick consistency. Blend everything again. Return the pot to the heat and warm the soup, stirring, for another 2 minutes.
