Cooking method

1. Peel the potatoes, put them to boil in salted water.
2. Pour kefir into a bowl, add salt, soda, citric acid.
3. Without waiting for the reaction to finish, pour in the sifted flour.
4. Mix everything together.
5. Put the mass on the work surface, knead the dough. It should be soft, obedient, pleasant. Cover it with a towel.
6. Peel the onion, wash it, dry it with a paper towel and chop it finely.
7. In a frying pan, heat the vegetable oil, put the onion, fry it until tender. At the end of frying, put the curry and cumin, simmer for 1-2 minutes and remove from the stove.
8. Drain all the liquid from the potatoes, remember the mashed potatoes.
9. Add the fried onion to the puree, mix thoroughly. It's time to try the filling with salt - add salt if necessary.
10. Turn on the oven (it needs to be preheated to 210 degrees).
11. You need to make pies in small portions so that the dough does not have time to wind up. Divide it into equal pieces, from which roll the balls. Roll each one into a pancake no thicker than 5 mm.
12. Put the filling in the center of each pancake, seal the edges.
13. Cover the baking sheet with baking paper, put the pies on it seam down.
14. Lightly beat the egg and smear it on top of the pies.
15. Bake the pies in a preheated oven for 25-30 minutes (until a beautiful and appetizing browning).

The pies are ready. Serve them to the table with fervor from the heat.
