Salmon is dried with paper towels, pepper and salt to taste, spread in a mold lined with paper or foil.
Preheat the oven to two hundred degrees. Bake the fish for 20 minutes until it becomes matte.
We make a relish. Finely chop the onion, herbs, capers. Mix everything with olive oil, lemon zest (grated) and lemon juice.
Ready baked salmon is served with relish.
