Step 1:
How to make a classic cottage cheese cupcake? Prepare the ingredients. All products should be at room temperature, then the cupcake will rise well and be delicious. Therefore, remove the eggs, butter and cottage cheese from the refrigerator in advance. Cottage cheese and butter choose high-quality, natural, without milk fat substitutes.
Step 2:
Beat softened butter with sugar with a mixer.
Step 3:
Add cottage cheese and eggs. Be sure to wash the eggs before use, as even the seemingly clean shell may contain harmful bacteria. It is best to use food detergents and a brush.
Step 4:
Beat everything with a mixer again to get a homogeneous mass.
Step 5:
Grate lemon zest directly into a bowl on a fine grater and add vanilla, mix.
Step 6:
Pour in the flour sifted and combined with baking powder. Stir until smooth. The dough turns out very thick. Put it in a foil-lined (or parchment) and oiled form. Put the form with the dough in a preheated 180 degree oven for about 45 minutes (we focus on our oven). Check the readiness of the cake with a wooden skewer. Take it out of the oven, cool it, take it out of the mold.
Step 7:
While the cupcake is cooling, melt the chocolate (it is better to take bitter, it will give a special taste to cottage cheese pastries). Decorate the cupcake with fresh raspberries and pour melted chocolate over it. Serve to the table. Bon appetit!
