Kefir and Banana Smoothie

The simplest, healthiest kefir drink! Kefir on its own is often tart, and few people enjoy drinking it plain. A ripe, fragrant banana comes to the rescue — with it, you won't need any sugar or jam. You'll get a real dessert that can stand in for a meal.

    Get the ingredients ready for the smoothie. Use whatever fat level of kefir you prefer — it's not critical. Full-fat gives a richer, thicker drink; low-fat means fewer calories. The banana should be as ripe as possible, since an underripe one won't give the drink much banana flavor. If you're making it for a child, take the kefir out of the fridge ahead of time so it isn't too cold.

    Peel the banana and cut it into rounds. (Or skip the cutting board altogether and just break the banana into pieces right into the blender.)

    What to blend it in: a countertop blender is ideal — it whips the smoothie up quickly into a lovely, silky texture. If you don't have one, a trusty immersion blender works (most stick mixers come with that attachment now). A mini chopper also works for a single serving.

    Put the banana pieces in the blender and pour in the kefir. Blend for about a minute — there shouldn't be any large pieces of banana left.

    Pour the finished drink into glasses and serve right away. Don't let it sit too long — the banana will darken and spoil the look.

  • Ever since we got a blender, we've been making drinks like this from all sorts of things. We used milk more often, but kefir is much healthier — and this way it's tastier, too.
  • You can adjust the thickness with the amount of banana. Mine is on the thick, smoothie-like side.
  • If the banana isn't sweet enough for you, add a spoonful of honey.
  • Spices like vanilla or cinnamon also bring out the flavor nicely.
  • To make it more substantial, add some berries — fresh in summer, frozen in winter. Banana and strawberry is the best combination.
  • For a full breakfast, add a few spoonfuls of rolled oats: soak them in the kefir for 10 minutes first, then blend with the banana.
  • If you have no kitchen appliances at all, whisk it by hand — just mash the banana to a purée with a fork first.
