Step 1:

Step 2:
Mix yeast, sugar and warm milk and leave for 10 minutes.
Step 3:
Sift flour.
Step 4:
Add egg, soft butter, vegetable oil and salt to the sourdough, mix.
Step 5:
Add flour gradually to the dough.
Step 6:
Knead a soft elastic dough. Flour may need a little more or a little less.
Step 7:
Cover the dough with a towel and leave to rise for 1 hour. After an hour, knead the dough and leave it under a towel for another 1 hour. I used the dough that I had prepared in advance and frozen.
Step 8:
Filling.

Chop the nuts.
Step 10:
Peel and grate the apples on a coarse grater.
Step 11:
Grind the cloves in a mill. Heat olive oil in a frying pan, add cloves, cinnamon and nutmeg and warm for about 10 seconds.
Step 12:
Then add apples, powdered sugar and vanilla sugar to the pan.
Step 13:
Simmer, stirring, for 5 minutes.
Step 14:
At the end, add the chopped hazelnuts and mix.

Put out for another half minute and remove from the fire. Cool it down.

Roll out the dough into a thin rectangle.

Spread the apple filling evenly throughout the dough, leaving the edges free.

Roll the dough into a roll.
Step 19:
Transfer the roll to a baking sheet lined with parchment. Bake in a preheated 180 ° C oven for about 35 minutes.

Grease the finished roll with butter and cut into pieces.
