Cooking a treat is not difficult, the process is simple, the ingredients are available. All products for the preparation of the dough should be at room temperature. Therefore, they should be taken out of the refrigerator in advance. Sour cream for the cream should be greasy, otherwise the cream will not rise. You can use any nuts, not only almonds will do, but also peanuts, and it will also be delicious with walnuts.

Cooking method

1. Break the chicken eggs into a deep bowl, pour sugar and vanilla here. Beat eggs with sugar using an electric mixer at high speed for about 5-7 minutes. It is necessary that the sugar is completely dissolved. The mass will become airy and increase in volume.

2. Melt the butter, let it cool down a little, and then add it to the beaten eggs. Continue whisking at low speed for 20 seconds. Then pour kefir, beat with a mixer for a few more seconds, or you can just mix with a whisk.

3. In a separate container, sift flour and cocoa powder. We also add baking soda here. Mix thoroughly so that all the ingredients are evenly combined.

4. Combine the dry ingredients with the previously prepared mass. Mix with a hand whisk, but in no case do not beat with a mixer!

5. Prepare a detachable mold: the bottom is lined with parchment, you can additionally lubricate it with oil, but not necessarily. Pour the dough into the mold. Bake in the oven preheated to 180 degrees for 50-60 minutes.

6. Then let the biscuit cool down. It is better to cool it on the grill. The cooled biscuit is cut into three identical cakes. If the top is domed, it should be cut off.

7. Fry almonds in a dry frying pan, peel. Then chop coarsely with a food processor. You can chop it with a knife if there are no kitchen devices.

8. Put the fat sour cream in a deep bowl, pour powdered sugar. Beat the cream for 10-15 minutes at the highest speed of the mixer. The mass should thicken and increase in volume.

9. Add chopped almonds to the cream. Mix it up. We smear the cake with cream. we send it to the refrigerator for an hour.

10. At this stage, the cake is ready. It can be sprinkled with biscuit crumbs and served on the table. Or you can cover it with chocolate cream. So, let's prepare the cream for the coating.

11. Beat butter with sugar until fluffy. Then pour cold milk into the cream in a thin stream, do not stop whipping. Last of all, we pour cocoa powder. Beat until smooth.

12. We cover the cake with the resulting cream. You can decorate with almonds by rolling it in cocoa powder. But this is optional.
