Cooking method
Melt butter in a saucepan to a liquid state. If there is no desire to use the cooking surface, we can melt the butter in the microwave.
In a deep bowl, combine eggs, sugar and vanilla sugar. Whisk at high speeds for 5-7 minutes. The mass should turn white, double in volume and acquire a state of not too stable foam. Without ceasing to beat, pour in the melted butter in a thin stream and combine with a mixer until smooth.
Add sour cream to the oil mixture, stir it until smooth with a spatula. If desired, you can also work with a mixer here.
Pre-sift flour and combine with baking powder. In small portions, add flour to the liquid ingredients, mixing it well with a spatula each time so that there are no lumps.
Candied fruits for making a cupcake can be taken any. If it's just a small cube, we don't prepare them for work in any way. If, for a variety of taste, we use candied fruits of other fruits that are sold in large chunks, we cut them into small ones. Large pieces will immediately settle to the bottom, they will not look nice in the cut, and it is not too convenient to eat them.
Put the prepared candied fruits in a deep bowl, add a tablespoon of flour and mix so that each piece is covered with flour from all sides. This is necessary so that when the dough is poured into the mold, they are evenly distributed throughout the volume, and do not settle to the bottom. Mix until evenly combined.
We put the dough into a baking dish. If it is silicone, we do not lubricate anything, if we use metal or glass, it is better to lubricate with oil and sprinkle with flour, or spread with baking paper.
Bake the cupcake in the oven, preheated to 190 degrees for 45-50 minutes. We check the readiness with a wooden skewer, it should remain dry.
We take the hot cupcake out of the mold, leave it on the grill until it cools completely, sprinkle with powdered sugar and serve it to the table.
