Step 1:
How to make grated vanilla cake in butter? Prepare the products according to the list. The oil should be at room temperature. Wash the egg and dry it with napkins. Combine the soft butter with sugar and whisk at the highest speed of the mixer for 2-3 minutes. The mass will become more lush and the sugar will almost dissolve.
Step 2:
Beat a raw egg into the beaten butter and mix so that it is evenly distributed throughout the mass.
Step 3:
Sift the flour through a sieve and put it into the dough in parts in 2-3 approaches. Add a pinch of soda and vanilla on the tip of a knife. Quickly knead a homogeneous dough so that it does not stick to your hands. Flour may need a little more or less. Since this is a shortbread dough, it cannot be kneaded for a long time - it becomes sticky from this, and the finished products are only tougher. It is enough to mix all the ingredients until smooth. We need a soft and pliable dough.
Step 4:
Divide the finished dough into 2 unequal parts. Wrap the smaller part with cling film and put it in the freezer so that it freezes. It will take at least 30 minutes.
Step 5:
Cover the baking tray with special paper and roll out most of the dough over its entire surface.
Step 6:
Spread any non-liquid jam or jam throughout the dough.
Step 7:
Rub the frozen dough on a large or medium grater over the entire surface of the pie. Try not to leave large spaces open, fill them with grated dough evenly. Place the pie pan in the oven, preheated to 180 degrees, for about 30 minutes. Determine the exact time and temperature of baking according to your oven.
Step 8:
If there is a grill in the oven, then hold the pie under the grill for another 2-3 minutes so that the top of the pie becomes golden. Remove the finished pie from the oven and cool slightly. Serve with tea, cocoa, juice or milk. Bon appetit!

Try to minimize the process of kneading the shortbread dough. As soon as all the ingredients are mixed uniformly (literally 1-2 minutes), the kneading can be stopped. If you knead the dough for a long time, gluten will develop in the flour and the finished products will be stiff. And from active kneading, the dough becomes sticky and inexperienced housewives often begin to add flour. Due to a large amount of fat (margarine or butter) this dough is able to take a large amount of flour, remaining sticky for a long time. Be careful, because the result can be deplorable - the product in this case will be tough, unappetizing.
Advice:
the perfect shortbread dough is obtained with a quick kneading with a minimum amount of added flour. The amount of flour may differ slightly from that indicated in the recipe, depending on its properties, but the dough should be soft, plastic, oily. If you are cooking according to a recipe for the first time, experiment on small portions.
Absolutely any jam can be used to make such a pie. I like it best when it is made with plum jam or black currant jam. They give the cake a little sourness, which perfectly harmonizes with the sweet dough.
